Uttam Tiger Namkeen Manufacturing Process Revealed

Uttam Rana of Uttam Tiger Namkeen started the Namkeen manufacturing process by directly operating the furnace (भट्टी) of the factory equipment.

Afterward, the preparation of besan (बेसन), or chickpea flour, which is the base for Namkeen batter, was completed, finalizing the preparation for full-scale production.

The kneaded raw material is put into a machine and formed into a uniform shape. The machine completes the cooking process by frying.

Crispiness is maintained immediately after cooking. "देखो भैया अब नमकीन टूट गई। ये टोटल लगी नमकीन। ये नमकीन सिक कर रेडी हो चुकी है।" translates to "Look, brother, the Namkeen is now broken. This is all the Namkeen that's cooked. This Namkeen is ready after baking." (The actual quote from the video is meant to be translated)

To the cooked Namkeen, 'secret masale' (मसाले), or special seasonings, unique to Uttam Tiger Namkeen, were added to create its distinctive flavor.

Using machines and tools, the seasonings were mixed evenly into the Namkeen, and finally, sev namkeen (सेव नमकीन), a snack in the form of thin noodles, was completed and made ready for packaging.
